Want to go Keto (or Paleo) but just LOVE things like burgers (I'm actually more partial to Beyond Burgers), pizza, and anything wrapped in a tortilla? Here's a keto burger bun recipe you'll love!
It's straight from Kelley Heering's book, Keto Breads. According to the book, you can have all those bready and crusty things you crave and eat them too.
Not only that, as Kelley says, these are a snap to make and keep well in the refrigerator ... which is true. And I didn't know before now that psyllium husk powder stabilizes Keto breads.
Good to know! Eat them up!

Preheat over to 350 degrees. Prepare a baking sheet with parchment.
In a medium bowl, combine the dry ingredients.
In a small bowl, whisk the egg whites and apple cider vinegar.
Add wet ingredients to dry and mix using a handheld mixer or silicone spatula to form a thick batter.
Pour in hot water and quickly mix to incorporate. The dough will become more sticky and pliable, similar to thick oatmeal.
Divide into four equally-sized balls and place on prepared sheet. Flatten to roughly 1-inch thickness. The buns should rise to about 2 1/2 inches in height.
Sprinkle with flaky sea salt or sesame seeds if desired.
Transfer to oven and bake 40-50 minutes.
Cool on wire rack and store cooled buns in an airtight container.
