If you've used my recipes before you know I'm a HUGE fan of Mexican food. Or ... to be politically correct ... Hispanic food (doesn't really spark irresistible images in my mind of bubbling Mole or burritos dripping with cheese ... how about you?). That's why these Paleo Air Fryer Chicken Fajitas were just the ticket.
I just LOVE sitting in a Hispanic (????) restaurant and watching the sizzling platters of fajitas carried by joyful waitstaff whiz by my nose. Even if I didn't order them (they're really meant for two or more) they lift up my food-lovin' heart every time.
These fajitas are chicken ... but as the picture above suggests you can also do thinly-sliced steak or even deveined jumbo shrimp (shrimp might cook a little faster so you might want to remove them once they're pink and cooked through [or add after a couple of minutes]) with the same recipe.
I'm always looking for dishes to use with my Fab 'n Fast Paleo Taco Seasoning Mix too. And this totally fills the bill ... the seasoning is much better than anything you could eat from a package ,,, even from a Health Food store or site.
And the air fryer is soon becoming my all-time favorite kitchen appliance. Even though I can't stop buying and trying new ones. You can make juicy steaks (just did a ribeye last night), crispy chicken tenders ... even cake ... in it in minutes.
Also ... this is yet another Fab 'n Fast Paleo (FNFP) recipe ... using only 5 ingredients (including the tortillas but minus the spices and fixin's) and about 20 minutes total time.
Serve this dish as in the picture with guacamole, salsa, grated plant-based cheese. hot pepper slices, and whatever other fixin's you'd like. I used prepared almond-flour tortillas for mine as I'm super-busy with end-of-the-month chores.
But I also invite you to try these with 2-Ingredient Sweet Potato Tortillas (coming soon). And ... like in a restaurant ... you can put everything out and have your family do their own ... which really is most of the fun with fajitas.

Gone Paleo and miss Mexican food? Now you can have your fajitas in the air fryer, eat them yummily, and make them Fab 'n Fast with this recipe. Eat it UP!
Cut onion (fennel) and bell peppers in 1/4-inch slices. Halve chicken breasts and then cut into 1/4-inch slices. If using steak, cut into 1/4-inch slices. If using shrimp, peel, devein, and remove tails.
In a large ziploc bag, add all the ingredients and seasoning, seal and squeeze until everything is coated with seasoning. Add oil to bag and squeeze well to coat everything.
Spread part of the chicken (or steak or shrimp) mixture in the air fryer in one layer. Depending upon the size of your air fryer, you may have to do 2 or 3 batches.
Insert the air fryer basket and cook at 360 degrees F for about 8 minutes or until all ingredients are cooked through and the veggies are golden brown at the corners. If you use shrimp, you may have to add after you cook the veggies for 2 or 3 minutes or remove a few minutes early as they usually take only 4 or 5 minutes in the air fryer.
Serve fajitas in tortillas with your fixin's of choice. It'll be fun whole the whole family ... or a bunch a hungry friends ... if you put everything out in colorful dishes with warmed tortillas and let everyone make their own. OLE!
