I often quip to my clients (I call them “clients” because “patients” assumes that they’re sick) … “I won’t be there to pry the cookie dough out of your hands at 2am”. Hinting that … at some point … they’re going to have to do it for themselves if they want to lose weight.
Now you don’t have to. Here’s a super-Paleo/Keto alternative. Made with cashew butter, maple syrup (I substitute coconut nectar as I’m sensitive), almond flour, and flaxseed meal.
I even found some Keto-friendly rainbow sprinkles from People's Keto Company. They’re not as bright as the ones in the picture … but they ARE colored with uber-healthy ... and immune boosting turmeric, vegetable juice, and papaya.
Pack them in your lunches or serve as an after-school snack for the kids. SPOILER ALERT! THEY'RE ADDICTING ...
Here’s a dynamite Paleo/Keto alternative to BOTH birthday cake AND cookie dough. Made as healthy as you can get it with cashew butter, maple syrup almond flour, and flaxseed meal.

Add cashews butter, pure maple syrup and vanilla and almond extract to a medium bowl. Mix with a spatula until well combined and smooth.
Next add in almond flour and flaxseed meal. Mix until well-combined and a dough begins to form. If dough is too wet, add another Tbsp. or two of almond flour or flaxseed meal. Lastly, fold in sprinkles.
Use a medium cookie scoop to grab dough and then roll into balls. You should get about 8 balls. If desired, you can roll each ball into sprinkles.
Place energy bites on a baking sheet lined with parchment paper and place in the freezer for 30 minutes. Once they've hardened a bit, you can transfer to an airtight container and keep them in the fridge for 1 week (they go WAY before that) or in the freezer for up to 3 months.
Balls can be enjoyed straight from the freezer (if they're too hard, let them sit at room temperature for 5 to 10 minutes) ... as a matter of fact, the texture is better when they're stored in the freezer.
