Bluesy-Cheesy Cherry-Chix Paleo Wrap

Super Bluesy-Cheesy Cherry-Chix Wrap has gone Paleo! Plant-based Bleu Cheese and grain-free tortillas make these a slam-dunk taste-tastic meal or snack.

 ¼ cup chopped walnuts
 1 tsp olive oil
 ¾ lb boneless, skinless chicken breast, cut into 1-inch cubes
 ¼ cup firmly packed Follow Your Heart Bleu Cheese crumbles
 ¼ cup Dairy Free Blue Cheese Dressing
  cup dried cherries
 ¼ cup finely chopped celery
 ½ cup firmly packed chopped arugula
 kosher salt
 pepper
 3 to 4 8-inch grain-free tortillas

Pour walnuts in a large dry nonstick skillet over medium heat and shake until they begin to color and release their oils. Remove and set aside.

Heat the oil in the same skillet over high heat. Add the chicken. Season with 1/2 tsp. kosher salt and 1/2 tsp. pepper. Cook until cooked through, 3 to 5 minutes, stirring to brown on all sides. Let cool. (Can be made ahead, cooled, and stored in the fridge)

Mix together the Bleu Cheese, Blue cheese dressing, cherries, and celery. Add the chicken. (The filling can be refrigerated and and finished later here too)

Toss the arugula and walnuts into the chicken mixture. Divide among the tortillas and wrap.
